It holds the temps for less than the times mentioned. The slots where the pans slide into are slightly wider than needed. The pans can and will fall.

The Bistro! Nice!
This perfect for us to use when transporting our hot soups to locations. My only wish is the insert would remove for cleaning. Its glued into place and makes it difficult to properly clean the inside.

Well I ordered it on Wed. They said it would be there Saturday, but it didn't arrive until the following Wed. Disappointing in that I missed the event that I purchased it for. I don't mind a week delivery time, just deliver it when you say you will. Be mindful of that when ordering. other than that it is good.
